Their farms Finca Villa Vista and Finca Paulet produce excellent coffees at high elevation (~2300 masl) with minimal human intervention.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eEudis is one of the pioneers on experimenting various processing techniques in the Incahuasi Valley. This particular lot I’m bringing on features a two-stage fermentation process. First, the whole cherries are placed in a plastic bag to ferment. Then, the cherries are pulped, and undergo a dry fermentation process (no added water, directly ferment in mucilage), followed by a washed process to finish.
