I can still remember the first time I tried coffee from Finca Sophia - it was at Substance Cafe in Paris, where I had the most unforgettable cup of coffee till now. After trying so many different coffees from Panama, Finca Sophia is always something different for me. The high elevation, the ecological farming practices, the perfect execution, resulting in a crisp clear cup with intense florals, lingering acidity, and balanced sweetness.

This year, I'm glad that I was able to source a few lots from Finca Sophia's 2025 late harvest. The rigorous harvest, sorting, and processing techniques go to the extreme of having single-day lots and sorting cherries by their ripeness (to have much more directed tasting profiles).

This natural coffee is extremely clean - to be honest it tastes like one of those cold fermented washed coffees. I taste the florals, balanced citrus acidity and a lingering fruit tea like sweetness.
