Fermentation was carried out in custom-built stainless steel tanks, guided by LOY-011P and LOY-006P. A fermentation medium (LOM-111) was used at a volume of 17.6 liters, representing a 15% concentration. The process lasted 2.0 days under controlled conditions in an average temperature of 21.45°C The coffee was dried over 31.4 days in temperature and humidity-regulated drying rooms.
