Fermentation was carried out in custom-built stainless steel tanks, guided by LOY-
011P and LOY-006P. The process lasted 13.1 days under controlled conditions in an average temperature of 8.5°C. The coffee was dried over 20.4 days in temperature
and humidity-regulated drying rooms.
Backstory of finding this coffee: Originally I purchased the Lost Origin x Jaramillo Gesha Natural and was absolutely stunned by the juiciness and cleanness of the processing done to the coffee. However, I didn't reserve enough quantities and the greens were a bit pricier.
However, I looked up the yeasts and the processing method, and come across this Las Margaritas Depulped coffee that used the exact same LOY-011 and LOY-066 yeasts, just with different greens. I was wondering - how much work can a yeast do if the greens are different? And the answer is clear - it can do A LOT. This coffee is clean, vibrant, juicy, just like the one I liked previously.
