Mount Totumas Ara is a special lot where coffee cherries from nearby farms neighboring Mount Totumas are being collected and centrally processed. The "Milky Way" processing is a cold fermentation technique where depulped and bagged cherries are fermented when submerged under cold natural spring water for 48 hours followed by an extended fermentation in containers for 24 hours. Then the coffee gets dried on indoor beds in a controlled environment.
